There are places that slow us down the moment we step inside – places that feel warm, clear and soothing in a way that settles something deep within us. Our stay at the ECO Aparthotel OLM was exactly that: days filled with warmth, calm, vegan delights and nature that invited us to breathe more deeply.
Why We Chose the OLM – Sustainability & Vegan Delights
One of the main reasons we chose the OLM was its genuinely lived commitment to sustainability. The hotel was built to KlimaHaus-A standards, powered by over 3,000 m² of photovoltaic panels, supported by geothermal energy and designed around consciously resource-friendly principles. Here, sustainability isn’t a slogan – it’s a way of life.
Equally important to us as vegans: vegan options are completely natural here. At breakfast, in the PRENN° restaurant, and even at the evening buffet, we were spoiled with fresh, creative, regional dishes – often made in the hotel’s own organic bakery.
A little tip: We let the hotel know about our vegan diet when booking. I highly recommend doing the same so the team can lovingly prepare your meals in advance.
This combination of modern sustainability and genuine vegan hospitality won us over immediately.
Our Home at the OLM – Warm Wood & Views Across the Valley
The Eco ApartSuite M felt like a sanctuary from the moment we stepped in. Warm larchwood walls, large windows and plenty of light created a deeply calming atmosphere.
Our private sauna quickly became a highlight: outside the crisp autumn air, inside the soothing warmth – perfect after a walk or a workout.
From our bed we looked straight out across the valley – a wide, quiet view framed by the forested slopes on either side, giving the landscape a gentle softness. Each morning felt calmer and more peaceful because of it. My husband adored the rain shower, while I fell in love with the little yoga space in front of the window – especially when the autumn sun moved across the wooded hills opposite.
And of course: the cosy armchair in the corner with a cup of tea – my personal relaxation spot.
Stargazing in the Pool
When we arrived it was raining lightly, but soon the sky cleared and the air felt fresh and crisp. We decided to make the most of our first evening.
We slipped into the heated outdoor pool, swimming from the warm indoor area into the cool night air – and above us, an unexpectedly clear sky opened up. We spotted the Big Dipper, Cassiopeia and countless tiny stars. Warm in the water, cool on the face – a magical, quiet moment.
Back in our suite, we went straight to the sauna. The warmth felt like a gentle embrace – relaxing, soothing, perfect after the swim.
Later, we cooked a simple dinner in our small kitchen and enjoyed a cosy evening in. This flexibility is one of the things we truly love about the OLM.
A Sunny Walk Along the Ahr
The next morning greeted us with sunshine. We walked along the Ahr (Aurino) – turquoise, clear and beautifully calm.
After the gym and our beloved sauna session, we headed to the PRENN° restaurant in the evening, where a dedicated vegan multi-course menu was prepared just for us. Each dish was fresh, seasonal and thoughtfully crafted – you can really feel how much care goes into vegan cuisine here.
Note: PRENN° is very popular – reservations are essential. Ideally book a few days before your arrival, especially if you’re vegan.
Tip: As an aperitif, I had the “Sissy” and my husband chose the “Tony” – both alcohol-free, light, aromatic and wonderfully creative.

Hike to the St. Walburga Chapel
Our third day was again mild and sunny. We hiked to the St. Walburga Chapel, a peaceful spot with stunning views of the valley. You can walk to the chapel directly from the OLM – we chose the small woodland path that begins just before the hotel. It’s a quiet, beautiful trail through the forest, and along the way we discovered so many tiny, magical mushrooms that we kept stopping to look at them.
Tip: If you visit the chapel, take this woodland path – it’s far more atmospheric than the route around the outside and a lovely little nature moment.
At the chapel, a serene view of the South Tyrolean mountains opened up – a perfect spot to pause and breathe.
Back at the OLM, we made ourselves a cup of tea, followed it with a gym session and a visit to the sauna.
In the evening, there was a buffet – and it was wonderfully done:
- A generous selection of vegan cold starters (alongside non-vegan options for other guests).
- Warm vegan dishes – starter, main and dessert – prepared fresh just for us.
This mix of free choice and personally cooked warm dishes felt incredibly thoughtful. You can truly feel that at the OLM, you’re not just “included” – you’re genuinely seen.
The First Snow
On our fourth day, the first snow arrived – soft, quiet and a little magical. We stayed at the hotel, enjoying the gym, sauna, a long bubble bath and plenty of rest.
Dinner was again a buffet, with a big vegan starter selection and freshly prepared warm vegan dishes, from starter to dessert. Thoughtful, attentive and beautifully done.

We especially loved the breakfast: diverse, nourishing and full of options for vegan guests.

One last coffee, one last vegan breakfast and one last look across the Pustertal valley – then it was time to head home. We left with a deep sense of calm and many beautiful memories.
