Who would have thought that something so delicious could also be so healthy? These chocolate coconut macaroons are the perfect Christmas treat for anyone looking for a sweet yet wholesome indulgence. With just three simple ingredients, they are quick to make, vegan and gluten-free. But what makes them so special?
Why coconut flakes and bananas are ideal for Christmas biscuits
Coconut flakes provide healthy fats that give your body quick energy. They contain fibre, which supports digestion, as well as valuable minerals such as iron, zinc and magnesium.
Bananas are true all-rounders: they are rich in potassium, which is important for heart and muscle function, and vitamin B6, which helps regulate hormones. They also naturally add the necessary sweetness – with no added sugar!
Recipe
Ingredients
- 3 ripe bananas
- 180 g coconut flakes
- dark chocolate (unsweetened)
Instructions
- Mash the bananas with a fork until smooth and creamy. Mix with the coconut flakes until you have a sticky dough.
- Shape into small balls and place on a baking tray lined with baking paper.
- Bake in a preheated oven at 180 °C (top/bottom heat) for 10–12 minutes, until golden brown.
- Allow to cool completely – patience is worth it!
- Melt the chocolate in a heatproof bowl over simmering water and dip each macaroon halfway into the chocolate.
- Sprinkle with a few coconut flakes and place briefly in the fridge until the chocolate sets.
And voilà – your healthy, homemade chocolate coconut macaroons are ready! Perfect as the highlight on a Christmas biscuit plate or as a sweet ending to a festive meal.
Tip: They also taste wonderful straight from the fridge – the perfect treat after a winter walk!
