- 50 g sugar
- 1 tsp vanilla sugar
- 50 g flour
- 2 tbsp coconut oil
- 2 tbsp aquafaba (= water from 1 jar/can of chickpeas)
- 1 pinch of salt
- some water
- baking paper
- little notes with words of wisdom (handwritten or printed)
Instructions
- Begin by preparing the notes for the inside of the fortune cookies. Print them out or write them by hand on small slips of paper. Use non-toxic pens or ink.
- On a sheet of baking paper, draw circles with a diameter of 8 cm. A cup or glass works well as a template.
- Melt the coconut oil gently over a low heat. Mix it with the flour, sugar and vanilla sugar. Add 2 tbsp aquafaba, which you can simply pour from a jar or tin of chickpeas.
- Whisk everything into a smooth batter, adding a little water if needed. The batter should be thick yet still pourable.
- Spread about 1 tablespoon of batter evenly over each circle. Lightly dust the paper with flour to prevent sticking. Spread the batter evenly – the edges can be slightly thinner.
- Preheat the oven to 180 °C (top/bottom heat). Bake for 5–7 minutes, until the edges turn golden brown.
- Work quickly before the cookies harden: fold each circle into a half-moon, place a slip of paper inside, then press the edges together. Shape over the rim of a glass to create the classic fortune cookie shape. If they harden too much, briefly warm them again in the oven.
- Store in an airtight container until New Year’s Eve to prevent drying out – though of course, they taste best fresh!
