- 50 g sugar
- 1 T
- Vanilla sugar
- 50 g flour
- 2 tbsp coconut oil
- 2 tbsp aquafaba (= water from 1 jar/can of chickpeas)
- 1 pinch of salt
- some water
- Baking paper
- Wisdom on small pieces of paper (handwritten or printed)
Instructions
- Start by preparing the words of wisdom for the inside of the fortune cookies. Print them out or write them by hand on small pieces of paper. Make sure you use non-toxic pens or ink.
- Draw circles with a diameter of 8 cm on baking paper. Use a cup or glass as a template.
- Melt the coconut oil in a saucepan over a low heat. Then mix it with the flour, sugar and vanilla sugar. Add 2 tablespoons of aquafaba (vegan protein substitute made from chickpea cooking water), which you can simply skim from the tin or jar.
- Stir the mixture with a whisk until smooth, adding a little water if necessary. The batter should be thick but still runny.
- Spread about 1 tablespoon of dough evenly over each circle you have drawn. Sprinkle the paper with a little flour to prevent the cookies from sticking to it. Make sure to spread the dough evenly so that the cookies bake evenly. The edges of the circles can be slightly thinner.
- Preheat the oven to 180 degrees top and bottom heat. Bake the cookies for 5-7 minutes until the edges are golden brown.
- Act quickly before the cookies harden: Fold the circles in half and place a piece of paper with wisdom inside. Then press the edges together and shape the cookie with the straight side over the edge of a glass to create the typical fortune cookie shape. If the cookies are too hard to shape, warm them briefly in the oven.
- Store the cookies in an airtight container until New Year’s Eve to prevent them from drying out. But of course they taste best fresh!
