Who would have thought that something so delicious could also be so healthy? These chocolate coconut cookies are the perfect Christmas treat for anyone looking for a sweet but healthy temptation. With just three simple ingredients, they are quick to make, vegan and gluten-free. But what makes them so special?

Why coconut flakes and bananas are ideal for Christmas cookies

Coconut flakes provide healthy fats that give your body quick energy. They contain fiber, which aids digestion, as well as valuable minerals such as iron, zinc and magnesium.


Bananas are true all-rounders: they are rich in potassium, which is important for the heart and muscles, and vitamin B6, which supports hormone regulation. They also naturally provide the necessary sweetness – without any added sugar!

Recipe

Ingredients
  • 3 ripe bananas
  • 180 g coconut flakes
  • Unsweetened chocolate

Instructions

  1. Mash the bananas with a fork until they have a creamy consistency. Mix them with the coconut flakes until you have a sticky mixture.
  2. Form small balls and place them on a baking tray lined with baking paper.
  3. Bake the coconut biscuits in a preheated oven at 180 degrees (top and bottom heat) for 10-12 minutes until golden brown.
  4. Let them cool down completely – patience pays off!
  5. Melt the chocolate over a bain-marie and dip half of the coconut biscuits into it.
  6. Decorate them with a few coconut flakes and place them briefly in the fridge so that the chocolate sets.

And voilà – your healthy, homemade chocolate coconut cookies are ready! Perfect as a highlight on a plate of cookies or as a sweet finish to a Christmas meal.

Tip: They also taste great straight from the fridge – the perfect treat after a winter walk!
