A cup or glass works well as a template. <\/li><li>Melt the coconut oil gently over a low heat. Mix it with the flour, sugar and vanilla sugar. Add 2 tbsp aquafaba, which you can simply pour from a jar or tin of chickpeas.  <\/li><li>Whisk everything into a smooth batter, adding a little water if needed. The batter should be thick yet still pourable. <\/li><li>Spread about 1 tablespoon of batter evenly over each circle. Lightly dust the paper with flour to prevent sticking. Spread the batter evenly \u2013 the edges can be slightly thinner.   <\/li><li>Preheat the oven to 180 \u00b0C (top\/bottom heat). Bake for 5\u20137 minutes, until the edges turn golden brown. <\/li><li>Work quickly before the cookies harden: fold each circle into a half-moon, place a slip of paper inside, then press the edges together. Shape over the rim of a glass to create the classic fortune cookie shape. If they harden too much, briefly warm them again in the oven.  <\/li><li>Store in an airtight container until New Year\u2019s Eve to prevent drying out \u2013 though of course, they taste best fresh!
